Thyme Out Tequila Cocktail

- 2 oz tequila - 1 oz coffee liqueur - 1/2 oz fresh lime juice - 1/2 oz thyme simple syrup* - Thyme sprig, for garnish To make the thyme simple syrup, combine equal parts sugar and water in a saucepan over medium heat. Stir until the sugar is completely dissolved, then add a handful of fresh thyme sprigs. Let the mixture simmer for a few minutes, then remove from heat and let cool. Strain out the thyme sprigs and store the syrup in an airtight container in the fridge. To make the cocktail, combine all ingredients in a shaker filled with ice. Shake well and strain into a chilled glass. Garnish with a fresh thyme sprig and enjoy!
