01The kitchen is behind the bar
Your next great cocktail might taste like dinner.
Mushrooms. Miso. Tomato. Cheese. Ingredients you’d expect on a tasting menu are finding their way into the glass, bringing earthiness, salt and umami alongside the familiar sweet and sour.
This goes well beyond a spicy Margarita. Superbueno’s Mushroom Margarita and Danico’s miso-and-sesame Sado Miso show how far the flavor conversation can travel.

02The other kind of brewing
Tea gives coffee
a little competition.
Espresso gets the spotlight. But tea appears in more of the cocktails we studied: matcha, oolong, hojicha and other infusions bring a different kind of depth to the glass.
The twist? Coffee reaches more bars. Tea appears more often in the drinks themselves. Two different ways to be a menu favorite.

03A very well-traveled spirit
Agave is
almost everywhere.
Gin remains the most widespread spirit in the menus we collected. But tequila and mezcal together come remarkably close. Agave isn’t confined to Margaritas: it turns up in Negronis, Martinis and savory drinks, too.

04The enduring appeal of a familiar name
The future still has
a Martini-shaped glass.
New ingredients haven’t erased the classics. They’ve given bartenders a familiar starting point for something personal. Martini and Martinez names outnumber any other cocktail family we tracked.

05What you taste. What you feel.
The ingredient you notice
might be texture.
A clear pour can hide a complicated preparation. Clarification, fermentation and carbonation show up repeatedly in menu descriptions, adding another layer to how a drink is experienced.
It’s a useful shift in perspective: think beyond the ingredient list, and consider the finish, the body and the bubbles.

Zero proof has
its own point of view.
We found 109 explicitly non-alcoholic drinks across 28 bars. Tea, bitter botanicals, fermented ingredients and savory flavors give the category room to explore well beyond juice and soda.
