Smoky Pineapple Horchata

This drink combines the smoky flavor of Mezcal with the creamy sweetness of pineapple horchata. Ingredients: - 2 oz Mezcal - 2 oz pineapple horchata* - 1 oz fresh pineapple juice - 1/2 oz lime juice - 1/2 oz agave nectar - Pineapple wedge, for garnish Instructions: 1. In a shaker, combine the Mezcal, pineapple horchata, fresh pineapple juice, lime juice, and agave nectar. 2. Add ice to the shaker and shake until well chilled. 3. Strain the mixture into a glass filled with ice. 4. Garnish with a pineapple wedge and enjoy! *To make pineapple horchata: blend 2 cups of fresh pineapple chunks, 1 cup of rice (soaked overnight), 4 cups of water, 1 cinnamon stick, and 1 tsp of vanilla extract until smooth. Strain the mixture through a fine-mesh sieve and sweeten with agave nectar to taste.
