Ingredients: - 1 1/2 oz gin - 1/2 oz elderflower liqueur - 1/2 oz fresh lime juice - 1/2 oz simple syrup - 1 oz cucumber juice - 1/4 oz blue curaçao - 3/4 oz tonic water - For spherification: - 1/2 cup tonic water - 1/2 tsp calcium lactate - 1/2 tsp sodium alginate - 2 cups distilled water Instructions: 1. Prepare the spherification bath by combining distilled water with sodium alginate in a bowl. Blend well and let it sit for about 15 minutes to eliminate air bubbles. 2. In another bowl, mix the tonic water with calcium lactate. 3. Using a syringe or pipette, drop the tonic water-calcium lactate mixture into the sodium alginate bath to create spheres. Let them sit for a minute before removing and rinsing in fresh water. Set aside the tonic spheres. 4. In a cocktail shaker, combine gin, elderflower liqueur, lime juice, cucumber juice, simple syrup, and ice. Shake well until the ingredients are thoroughly mixed and chilled. 5. Strain the mixture into a coupe glass. 6. Slowly pour blue curaçao over the back of a spoon to create a layering effect. 7. Gently add the prepared tonic spheres to the cocktail to resemble floating, shimmering lights. 8. Top with a splash of tonic water for effervescence.
