Rue Royal

A sophisticated spin on the classic Sazerac, the Rue Royal swaps out whiskey for a combination of cognac and herbal liqueur. Ingredients: - 2 oz cognac - 0.5 oz herbal liqueur (such as Chartreuse) - 1 sugar cube - 2 dashes Peychaud's bitters - Absinthe or pastis, for rinsing the glass - Lemon peel, for garnish Instructions: 1. In a mixing glass, muddle the sugar cube with the bitters until dissolved. 2. Add the cognac and herbal liqueur and fill with ice. 3. Stir until well-chilled and strain into a chilled, absinthe-rinsed glass. 4. Garnish with a lemon peel, twisting it over the drink to release the oils.
