- 1 1/2 oz mezcal - 1/2 oz St. Germain elderflower liqueur - 1/2 oz lime juice - 1/4 oz honey syrup (equal parts honey and water) - 1 egg white - Dash of lavender bitters To make this cocktail, first dry shake the mezcal, St. Germain, lime juice, honey syrup, and egg white in a shaker without ice. This helps create a frothy texture. Then add ice and shake again. Double strain the mixture into a chilled glass and add a dash of lavender bitters on top. The result is a refreshing and complex cocktail with notes of smokiness from the mezcal and a floral sweetness from the elderflower liqueur.
