Ingredients: - 1.5 oz premium London Dry gin - 0.5 oz elderflower liqueur - 1 oz fresh Bartlett pear juice (strained) - 0.25 oz fresh lemon juice - 0.25 oz honey syrup (1:1 honey and water) - 2 dashes celery bitters - Dry sparkling wine (to top) - Thin pear slice and edible flower, for garnish Glass: Coupe Shake gin, elderflower liqueur, pear juice, lemon juice, honey syrup, and bitters over ice. Fine strain into a chilled coupe glass. Top with a float of dry sparkling wine. Garnish with a thin slice of pear and an edible flower.
