Glass: Chilled Nick & Nora glass Ingredients: - 2 oz aged rum (infused with extra virgin Greek olive oil via sous-vide, then fat-washed and filtered) - 0.75 oz lemon juice (freshly squeezed) - 0.5 oz homemade fig and thyme syrup (fresh figs, Greek honey, thyme simmered and strained) - 0.25 oz Skinos Mastiha liqueur - 2 drops orange bitters - Pinch of sea salt Sea Salt Foam: - 1 egg white - 0.5 oz simple syrup - 1 barspoon sea salt solution (1:10 sea salt to water) - 2 drops lemon juice Garnish: - Dehydrated fig wheel - Sprig of fresh thyme - Olive oil droplet art on foam (using a dropper) Preparation: 1. Sous-vide 8 oz of aged rum with 1.5 oz high-quality Greek extra virgin olive oil at 135°F (57°C) for 2 hours. Chill, then freeze overnight. Skim and strain through cheesecloth to clarify. 2. Shake infused rum, fig and thyme syrup, lemon juice, Skinos Mastiha, orange bitters, and a pinch of sea salt with ice. Fine strain into a chilled Nick & Nora glass. 3. For the sea salt foam: dry-shake egg white, simple syrup, sea salt solution, and lemon juice until frothy, then shake again with a single ice cube. Spoon or pipe a layer atop the cocktail. 4.
