Ingredients

- 1 cup raw hazelnuts
- 1 cup vodka or brandy
- 1/2 cup allulose (or other keto-friendly sweetener)
- 1 vanilla bean, split lengthwise
- 1 cinnamon stick
- 1 cup water

Instructions

1. Preheat your oven to 350°F (175°C). Spread the hazelnuts on a baking sheet and toast them for about 10-15 minutes, or until they are golden brown and fragrant. Let them cool, then roughly chop them.
2. Combine the chopped hazelnuts, vodka or brandy, allulose, vanilla bean, and cinnamon stick in a large jar or container. Seal the container and let it infuse for about 2 weeks, shaking it gently every few days.
3. After the infusion period, strain the mixture through a fine-mesh sieve or cheesecloth, discarding the solids. In a saucepan, combine the hazelnut-infused alcohol with water. Heat the mixture over low heat, stirring occasionally, until it is well combined and the allulose has fully dissolved. Do not let it boil.
4. Remove the saucepan from the heat and allow the liqueur to cool. Once cooled, transfer it to a bottle or jar and store it in a cool, dark place. The flavor will continue to develop over time.

Alternative Sweeteners

While allulose is a great keto-friendly sweetener for this recipe, you can also experiment with other low-carb sweeteners such as erythritol, monk fruit sweetener, or stevia. Keep in mind that the sweetness level and flavor profile may vary, so you may need to adjust the quantity to suit your taste.
