Angostura Guava Daiquiri with Clarified Juice

Ingredients: - 2 oz white rum - 1 oz guava juice - 0.5 oz lime juice - 0.5 oz simple syrup - 2 dashes Angostura bitters - 1 oz clarified juice (pineapple or grapefruit) Directions: 1. In a shaker, add white rum, guava juice, lime juice, and simple syrup. 2. Add ice and shake vigorously for 10-15 seconds. 3. Strain into a chilled coupe glass. 4. Float clarified juice on top of the cocktail. 5. Add two dashes of Angostura bitters. 6. Garnish with a lime wheel or a small piece of fresh guava.
