This cocktail pays homage to the infamous Australian bushranger, Ned Kelly, by incorporating native Australian ingredients with the bold flavor of Irish whiskey. Ingredients: - 2 oz Irish whiskey - 1 oz lemon myrtle syrup - 1/2 oz fresh lemon juice - 3 dashes of wattleseed bitters - 1 egg white - Lemon twist (for garnish) Directions: 1. In a cocktail shaker, add Irish whiskey, lemon myrtle syrup, fresh lemon juice, wattleseed bitters, and egg white. 2. Dry shake (without ice) vigorously to emulsify and create a frothy texture. 3. Fill shaker with ice and shake again until chilled. 4. Double strain into a chilled coupe glass. 5. Garnish with a thin lemon twist, lightly rubbed around the rim of the glass to release its oils.
