Instructions

Description: The Thai Relish Refresher is an innovative cocktail that draws inspiration from the vibrant flavors of Ajaad, a traditional Thai cucumber relish. Perfectly paired with a rich and aromatic Beef Wellington with Massaman sauce, this drink is crafted with Saneha gin to create a harmonious balance of freshness, spice, and subtle sweetness, served elegantly in a coupe glass over small ice cubes. Ingredients: - 50 ml Saneha gin - 20 ml cucumber & shallot syrup - 15 ml rice vinegar - 10 ml lime juice - 2 dashes of Thai chili bitters - Fresh Thai basil leaves, for garnish - Small ice cubes Cucumber & Shallot Syrup Preparation: 1. Peel and thinly slice 2 medium-sized cucumbers and 2 medium shallots. 2. In a saucepan, combine the cucumber slices, shallots, and 200 ml of water. Bring to a gentle simmer. 3. Add 150 grams of sugar, stirring until fully dissolved. 4. Let the mixture simmer for about 10 minutes, allowing the flavors to infuse. 5. Strain the mixture through a fine mesh sieve or cheesecloth, discarding the solids. 6. Allow the syrup to cool and store it in the refrigerator until ready to use. Cocktail Preparation: 1. Chill a coupe glass in the freezer or fill it with ice and water to cool. 2. In a shaker, combine the Saneha gin, cucumber & shallot syrup, rice vinegar, lime juice, and Thai chili bitters. 3. Add small ice cubes to the shaker. 4. Shake vigorously for about 15 seconds to ensure the mixture is well-chilled and infused. 5. Discard the ice from the coupe glass, if using to chill it. 6. Strain the cocktail into the coupe glass over a few small ice cubes. 7. Garnish with a sprig of fresh Thai basil, gently slapped to release its aroma. Enjoy the Thai Relish Refresher as a beautifully balanced accompaniment to a decadent Beef Wellington enhanced by the exotic Massaman sauce.
